Pork Chops with Stir-Fried Veggies

My Texas friend also sent me a shaker bottle of his “Secret Spice Mix #2” dry rub for meat. We had a few boneless pork chops so I rubbed them with his rub after brining them first. Tossed them on the gas grill and cooked ’em up right.

Stir-fried some peas, red bell peppers, and onions.

Served the pork chops with the veggies and mashed potatoes on the side. I like my pork a with a little pink in the middle.

Pork, Eggplant, and Shiso Soup

Our neighbor made a great tasting soup for us that we had to get the recipe for.

Saute some sliced onion in a stock pot. Add minced pork and brown. Cover with water, add chopped tomatoes and bring to a simmer. Add in sliced eggplant and stir. Season with a bit of fish sauce.

Chop up some shiso (perilla) leaves and add them to the soup. Serve hot. So good, one bowl is not enough.

This is a Vietnamese soup noodle dish that features a shrimp, tomato, and tamarind flavored broth, pork meatballs with spiced minced crab meat and minced shrimp, tofu, rice noodles, and shiso leaves. Annie makes this about every 6 months, and the huge pot never lasts more than two days. It is intensely flavored, and savored to the last drop!
