Orange "Dream-jiggle"

I don’t know about you, but during hot summer days, I absolutely love getting those Orange Creamsicles to enjoy. The tart-sweet flavors to the orange ice combined with the sweet vanilla ice cream in the middle is one of my fun summer indulgences. And of course, now that we live in Malaysia where it is summer all the time, I try to get these sweet treats every so often to enjoy.

So when it came time for the Royal Selangor Jellyriffic challenge, I knew I wanted to try to turn this ice treat into a jelly. I could visualize exactly what I wanted to do but I wasn’t sure if I could actually make the concept I had in my head translate into a real jelly. So, I shared with Nate my thoughts and vision.

He told me it sounded doable and so I put in on the list. A few days ago, I decided it was time to get to it.

Golden Mango Kiwi Konnyaku

Third time’s a charm, they say. They also say that it takes a woman’s touch. I’d say both had something to do with today’s jelly:

From the beginning of this Jellyriffic challenge, I’ve been trying to make a mango jelly that incorporated chunks of real mango in it. It’s mango season here in Kuching (among other fruits), and there is an abundance of sweet, ripe mangoes to be had. So I wanted to use some of the fresh local fruits in our jellies, like the Dragonfruit Agar-Agar that we made at the beginning.

I love visiting other people’s food blogs for inspiration. I have to hang my head in shame because as of late, I’ve been so busy that I’ve not had enough time to do that as often as I would like. Rice Krispies Treats

We had a pretty busy weekend, and it was tough finding time to make anything with the Royal Selangor Jelly Mould for the Jellyriffic Challenge. We were hoping to do at least 4 different creations but ended up only doing 3: yesterday’s Jelly Doughnuts, today’s Rice Krispies treats, and another one for tomorrow.

We had a birthday party to attend in the evening, so we decided to make these Rice Krispies as a dessert offering. The Rice Krispies treats were pretty easy to prepare, but the assembling took a lot of work, especially when the Krispies started to get cool.
